Wine District Chablis
Close to nature and in love with her exceptional château (several films have been shot on the estate), Athénaïs de Béru took over Château de Béru’s 15 hectares of vines in 2006. The winemaker converted the entire estate first to organic and then to biodynamic viticulture. Today, she produces some of the finest Chablis and shares her experience of “clean” winemaking with the region’s leading winemakers.
Clos Béru” is the estate’s flagship Chablis cuvée, which you can find at Wine District. It’s a monopoly because all the vines are located in the clos in the middle of the Château. On limestone soils, these old Chardonnays produce very low yields. After hand-picking, the wines are vinified and aged in demi-muid for 18 months, then 12 months in foudre, and finally 6 months in bottle before release. These great, powerful wines are the purest expression of the Chablis terroir. Cuvée Chablis “Clos Béru” has notes of candied citrus fruit, and is a perfect match for red tuna tartare or sushi.
