For his first participation in the Food Letter, Mathieu Quetglas from CAVE, invites us to discover a Langhe Nebbiolo Sottimano milésime 2022.

We left him at Valrose in Rougemont and now we find him at CAVE in Gland. For his baptism of fire in Monday’s Food Letter, former sommelier Mathieu Quetglas takes us on a journey of discovery through Piedmont with a magnificent wine from young vines planted in the Basarin cru vineyard in Neive, Piedmont. This is a charming “little Barbaresco”. The minty, balsamic nose is admirably refined. It precedes a palate of round, fleshy tannins and a spicy finish brimming with complexity. The sales and selections manager suggests we pair this bottle with a shoulder of lamb confit with black garlic and zucchini flowers.
