Thibaud Chadebec at Bellota-Bellota
Has Bellota-Bellota boss Augustin de Candolle found his rare pearl? In any case, the newly-hired chef already has a wealth of experience in the restaurant business. Having worked in such fine establishments as Groupe Sibuet, Maison Troisgros, Oustau de Baumanière and Le Moulin à Lourmarin, and with a desire to cook simpler dishes, Thibaud Chadebec has just taken over the stoves of the Iberian restaurant chain Bellota-Bellota in Geneva’s Old Town. The menu features Spanish-influenced cuisine with a focus on fish. Enjoy tuna ventresca with romesco sauce, yellowtail ceviche with cucumber and jalapeño pepper, or grilled green asparagus with salmon roe beurre blanc. As for music, let yourself be carried away by Keziah Jones, Sting or Manu Chao.
