Nicolas Turin, when music rhymes with gourmandise
Nicolas Turin began his apprenticeship at Maison Jeunet in the French Jura. After a multicultural career across France in renowned establishments such as Maison Lameloise in Burgundy and the Flocons de Sel restaurant in Megève, he decided to move closer to his family and joined the team at Domaine de Châteauvieux in Geneva. Very attached to the Geneva restaurant scene, he decided to leave the heights of Satigny after seven years of loyal service, joining the Café des Banques.
What he likes about this job is that there’s always movement, change, innovation and discovery. In his current position, he works in collaboration with Yoann Caloué on new ingredients to incorporate into the menu, new textures to bring to desserts and new flavor combinations. Over the course of time and discussions, they try, try again and end up with some very fine creations. They rework the sweet menu at Café des Banques so that the house evolves with the seasons, and new, ephemeral desserts appear on the menu.
Music has always motivated him to work, find new ideas and create. Thanks to the different regions he has explored and to his parents who have always diversified musical styles, Nicolas likes to listen to everything. When he’s working, his choice of music will determine the style of dessert or dish he invents.
