Loris Vial, the new owner of the arcade that formerly housed Monsieur Bouillon, reveals his musical secrets. Sound eclecticism is well and truly present at the Safre restaurant.

Born in the south of France, Loris Vial grew up by the Mediterranean. His heart sways between his mother’s Marseille and his father’s Aix-en-Provence. A rivalry that has always been neutral; his heart won’t budge. After completing his schooling in Lyon, the young Loris Vial arrived in Switzerland behind the benches of the École Hôtelière de Lausanne, where he completed his first internship with the Alain Ducasse group. “I took part in the launch of the 100% electric “Ducasse sur Seine” barge. It was a memorable experience for me, and taught me a lot about the business”.

After the EHL, he tried to return to the south of France, but decided to return to the shores of Lake Geneva. Back in Switzerland, it was alongside his family that he took over Monsieur Bouillon’s arcade, which he had just renamed Safre. Since December1, he has completely changed the visual identity of the place, while maintaining a traditional gastronomic approach, such as the vol-au-vent of sweetbreads, poultry and black truffle. Before we meet up again with Loris Vial for a portrait, let’s take a moment to listen to some music by Otis Redding, Matthieu Chedid or Hans Zimmer.
