The Asado evening at Calvin
As announced at the end of April, the restaurant Chez Calvin has recently been transformed into an Argentinian concept for the summer season. Entitled La Estancia, Fabian Affentranger and his team celebrate Asado, an ancestral South American cooking technique. Based on the grilling of whole pieces of meat and fish over a wood fire, the Asado is not just about cooking, it’s also a ritual that often goes on late into the night, combining wine, food and good company. On the winemaking side, Laura Catena is an Argentinian doctor and winemaker, with degrees from Harvard and Stanford. She runs the prestigious Bodega Catena Zapatafounded by her father Nicolás Catena Zapata. She has made a major contribution to the international development of Argentine wine, particularly Malbec. She is also founder of the Catena Institute of Wine, dedicated to terroir research.
