Serge Labrosse has more than one trick up his sleeve! Arriving from Saint-Barth, Nicolas Gicquel takes over management of the La Chaumière in Troinex for the summer season until October. Still at the heart of this Genevan country house, the chef has decided to change the furniture on the gastronomic restaurant’s terrace. And he’s not stopping there: new culinary creations include a dome of prawns, tomato textures, a roasted bass back and a golden sweetbread apple. On the sommelier side, young Michael Ramollari joins La Chaumière after a number of successful stints at Domaine de Châteauvieux, Hôtel Métropole and, more recently, Le Décanteur in the heart of Eaux-Vives. At Boléro Bistro in Versoix, chef William Beguin takes over the restaurant’s stoves after three years at La Chaumière, while Serge Labrosse’s wife takes over the running of the restaurant.
