The Auberge de l’Abbaye de Montheron which backs onto the Cistercian abbey and the Parc Naturel du Jorat, reopened its doors on January 15, with Alba Farnós Viñals, chefffe de cuisine, and Paul Marsden, manager and sommelier, at the helm. The two partners had already won over the hearts of Lausanne locals at their previous address, LE GRAM in Renens, followed by ephemeral gastronomic tables, at La Riponne and even a temporary natural wine bar. In Montheron, the chef will offer a cuisine inspired by the surrounding woods and her Catalan origins. Working closely with responsible local producers, the ingredients that go to make up the dishes have been carefully selected and enhanced by a creative and respectful approach. They all come from a radius of less than 100 km. We look forward to discovering this table, which promises an immersive and gourmet culinary experience.
