This year, the focus is on the endangered eel. In Switzerland and Liechtenstein, it is not served in any of the member establishments of Relais & Châteaux. Figures from the Food and Agriculture Organization of the United Nations (FAO) are alarming: 35.4% of marine resources are overexploited, illegal fishing accounts for 20% of global catches, and 35% of catches are discarded, often resulting in the death of the animals. The situation is particularly dramatic for eel stocks, which have collapsed worldwide. With 580 members and 800 restaurants, including 370 Michelin-starred ones, the Relais & Châteaux Association, alongsideEthic Ocean, is alarmed by the depletion of marine resources, and is calling on chefs and customers the world over to suspend consumption of overexploited species. “It is urgent and vital to offer our customers species that are not overexploited or that are farmed in sustainable conditions”, stresses Mauro Colagreco, Vice President Chefs at Relais & Châteaux.
