Has chef Gérard Rabaey finally found the perfect couple to take over his gourmet temple? Fingers crossed, it seems so. We are delighted to announce that the Pont de Brent is ready to write new gastronomic chapters from mid-January. The former chef of Ô 33 in Avenches is approaching his new professional life above Montreux with a healthy dose of humility. Joeffrey Fraiche’s vegetal cuisine, sprinkled with a few Asian touches, is designed to make the place his own. For lunch, the chef is planning a market menu as well as a more elaborate menu that will give diners a choice of three starters, three main courses and attractive cheese and dessert carts. A vegetarian menu is planned for the spring season. As for the dining room, Joeffrey plans to have his cooks interact during the meal, so that they can also participate in the service. Quite a program lies ahead at Pont de Brent !
