Straight from New York, "handrolls" are making their appearance in Geneva, on Rue du Nant. With Noro, Thomas Mousset and Cyrielle Sorlat invite discovery through their "handroll-bar & wine" concept.

In September, Thomas Mousset and Cyrielle Sorlat opened their first joint establishment in the Eaux-Vives district. Both graduates of the École hôtelière de Lausanne, they have brought back from their travels in Tokyo, New York and Los Angeles – as well as Paris, where Thomas already runs several establishments – this handroll-bar concept, still unheard of in Switzerland. At Noroyou can eat at the counter, facing the chef, or at the table, for greater intimacy. With a varied menu and fresh, high-quality produce, the duo offer a new version of sushi.

Accompanied by Juliano, their chef, they have developed a range of handroll recipes: tuna, sea bass, salmon flambé, wagyu, shiso avocado or sesame cucumber, there’s something for everyone. For the more daring, tataki, sashimi and tartar are also available. But their concept doesn’t stop there: both wine enthusiasts, Thomas and Cyrielle offer a fine selection of bottles carefully chosen to sublimate the experience, designed to harmoniously match the recipes. It’s a breath of fresh air and new ideas that we’re delighted to see at the start of the new year.
