Léa Charbonney and Mathieu Dormeau are the new duo at the Sauvage bar in Eaux-Vives. A powerful tandem for a place that's a hit.

A wine bar with a short but effective food menu, the bar Sauvage in the heart of Les Eaux-Vives is a business in the making. An establishment quickly adopted by Genevans, it continues to write fine wine and culinary pages despite the passage of time. While dear Mattia Baracchetti recently decided to leave the adventure for new projects, Léa Charbonney became the establishment’s manager, joined a few months ago by sommelier Mathieu Dormeau from Café des Banques. “With a great deal of humility, we want to break the wine codes and offer a diversity of fine, high-quality wines at prices to suit all budgets,” says Mattieu over the phone. This new tandem brings their talent to the crossroads of rue Henri-Blanvalet and rue de la Mairie. Let’s meet them again soon over a glass of Verduno Pelaverga, Domaine Burlotto 2021 and a few slices of Tuscan smoked black Angus.
