To continue the culinary journey initiated by Rafael Rodriguez and David Donneaud, the new tandem of Alba Farnós Viñals and Paul Mardsen takes up the torch at the Auberge de l'Abbaye de Montheron.

Time goes by but the duos follow one another at the Auberge de l’Abbaye de Montheron. After a remarkable stint by Rafael Rodriguez (in the kitchen) and David Donneaud (in the dining room), they are giving way to another duo who will continue to make the Auberge shine at the pinnacle of French and Swiss gastronomy. To take up the torch of this magnificent address set against the backdrop of a Cistercian abbey, we needed a creative duo who respected the values of the place. Alba Farnós Viñals and Paul Marsden have already wowed́ the people of Lausanne at their previous address, LEGRAM in Renens, followed by ephemeral gourmet tables, a buvette at La Riponne and even a temporary natural wine bar. The Catalan in the kitchen and the Briton in the dining room dreamed of taking over this address. “We were looking for a timeless place to welcome people and make them experience a unique moment,” enthuses the chef, named by Gault&Millau 2023 as one of “the ten chefs to watch”. “We want to further accentuate the link with the woods of Jorat and continue to work with local producers, in the Slow Food spirit,” continues Paul Marsden, who has been a strong advocate of this philosophy since LEGRAM opened in 2019.
