There’s something quite fascinating about the eclecticism of Eaux-Vives. This neighborhood in Geneva is constantly reinventing itself. New spots keep popping up, each one different from the next; different worlds intersect, and yet everyone still seems to be able to find their place there.
After *De BLEU!* and *Le Tablard*, Martin Burrus continues his Geneva adventure with mineral., a new wine bar set to open on August 25 at 4 Chemin Neuf, at the former MiFood Miraisin location. Even from just a quick glimpse of the venue’s vibe, one thing is already clear: Martin Burrus has succeeded in giving mineral. its very own identity. Elegant and understated, with wine at the center and a desire to create a lively space without going overboard.
The wine list will feature bottles selected for their precision, their origin, and, above all, their charm. In the kitchen, Nikitas Chatziroumpis will offer small plates to share, focused on the ingredients and designed to pair with the wines. In the dining room, Mattia Baldissara, currently the director of Le Tablard, will also take the helm at mineral.
But behind this new wave of openness, there’s also something we particularly love: this ability to reinvent oneself, to take on new ventures, and to envision new spaces. A younger generation brimming with ideas, taking risks, and continuing to energize the city. Geneva needs this. We’re already looking forward to exploring, sampling a few dishes, and, above all, opening some fine bottles.
