In November 2025, the Château d’Yquem exceptionally opens its doors to an ephemeral interlude imagined by by Mauro Colagreco Metamorphoses. This temporary table, set up in the heart of the estate, celebrates the silent transformations that shape matter, time and the work of man. At Mirazur, Mauro Colagreco intensifies the laws of nature: he works in harmony with the earth and living things, following the moon, drawing inspiration from the seasons and local harvests. His permaculture gardens are his open-air laboratory, where every plant, every root, every flower finds its place. His cuisine, instinctive and sensitive, transforms these stories into edible landscapes.
