In Geneva’s Old Town, Mare & Monti opens a new chapter. The arrival of Laurine Doulcet alongside Augustin de Candolle, a sommelier with a passion for natural wines and a well-known figure at Bleu Nuit and Mi Food Mi Raisin, brings a breath of fresh air. To our delight, she creates a lively, sincere and evolving cellar, where each bottle tells its own story. In the kitchen, Thibaud Chadebec remains faithful to a clear line of generosity, simplicity and carefully selected products. Far from the “exceptional products” of Bellota-Bellota, the team now defends a more direct and local approach: imperfect vegetables and fish and meat selected without intermediaries. With a menu that evolves with the seasons, Mare et Monti is reinventing itself. This transition reflects a deep-seated commitment to sustainable, responsible and living food.
