In 2025, Bernard Loiseau celebrates its 50th anniversary in Saulieu. Half a century of culinary excellence to celebrate.

On February 28, 1975, the young Bernard Loiseau took over the kitchens of the famous Côte d’Or, a former coaching inn and then country inn in Burgundy. His dream: to hang up the three stars previously obtained by Alexandre Dumaine on the pediment of this institution. Inhabited by an avant-garde culinary vision and his legendary drive, Bernard Loiseau transformed this historic site into one of France’s finest Relais & Châteaux, where the whole world flocked to taste his genius dishes, such as Jambonnettes de grenouilles à la purée d’ail et au jus de persil. Since the couple’s eldest daughter, Bérengère Loiseau, took charge of the group in 2023, history and renewal have accelerated. With new openings and renovation in full swing, it’s on the plate that change is most likely to occur. Louis-Philippe Vigilant and his wife Lucile, the pastry chef, are propelling the fundamentals of Loiseau cuisine towards a new-found modernity. A few prestigious dates are to be noted in our gourmet diaries: March 16 with Maison Guérard, June 2 with chefs Franck Pellux and Fabien Ferré, October 26 with David Toutain and December 7 with chef Marcel Ravin.
