Le Métropole becomes Table Brut
Things are happening on Rue du Prince. A few weeks ago, Lucas Desbiolles, former chef of Le Flacon in Carouge, returned to the heart of our beautiful Cité de Calvin. As committed a chef as he is tattooed, Lucas is back at the forefront of Geneva’s culinary scene, advocating a return to basics. Owner Paul Keenan gives him total freedom to express his talent and creativity. The duo offers a lunch menu geared towards business customers, with a dish of the day and an evolving menu. In the evenings, the atmosphere is getting louder, with proposals for sharing and personalized cocktails. The first titles are out with the artichoke escorted by scamorza, bacon with Swiss herbs and a salad of beans and fried onions. Why not succumb to the open pig raviole with fresh herb broth or the royal of snow peas, preserved lemons, roasted hazelnuts and zaatar serac. A trout cooked on one side, chard stuffed with sun-dried tomato and Thai basil is also on the menu. We look forward to visiting this talented chef soon, who has many surprises in store for us at his Table Brut.
