Whether it’s a magnificent pâté croûte or succulent rillettes, charcutier and caterer Romain Pellet has quickly built a solid reputation in Geneva. On the strength of this success, the Meilleur Ouvrier de France was looking for a collaborator he could count on. The former chef of Le Vallon, Julien Poulain, has joined the team. Having arrived in July, Poulain is now in charge of the catering side of the business. “Thanks to his experience and know-how, we’re going to be able to move upmarket with our daily specials, savoury entremets and weekend creations. We’re delighted he’s come and we’re looking forward to developing the kitchen even further,” reveals Romain Pellet. Wonderful news for this craftsman who, from the moment he opened his arcade in the Halle de Rive, has offered a range of healthy, quality products.
