Four hands, two universes and a single flame
On Monday, November 3 Café du Grütli welcomes Apolline Minier-Cottin and Lucas Desbiolles for a singular evening: that of an encounter, a dialogue between two free and sincere cuisines. Both share the same demand for common sense and proximity. Reasoned products, short circuits and the right gestures are the watchwords of the evening. These convictions can be tasted on the plate, without slogans or gimmicks. Apolline, who has worked in market gardening, butchery and Bruno Verjus’ restaurant in Paris, cooks with her hands as well as her heart. Lucas, true to the spirit of Table Bruterestaurant, cultivates the uncluttered style and warmth of his bistro on rue du Prince. Together, they imagine a menu as an intimate conversation. You’ll find beet ravioli, smoked daikon, glazed onion and watercress salad before a beef cheek, fermented red cabbage, anchovy condiment and pommes soufflés, like an earthy, sensitive and generous echo. The rest of the menu remains a secret, so be curious. “The idea of this four-hander is to bring together our shared passion through our different but complementary cooking styles,” confides Apolline. A union that makes for strength – in the kitchen as in life.
