The founding duo of Bánh Mì never seem to want to stop or rest on their laurels. More motivated than ever, Vanessa and Pierre continue to work on new projects and collaborations, much to the delight of Vietnamese sandwich lovers. From the beginning of this week, their restaurant on Place des Eaux-Vives will be open two extra evenings, from Tuesday to Saturday. At the same time, they are preparing the new Bánh Mì of the month, a creation based around octopus or mackerel, in collaboration with the chef from Café de la PaixJérémy Hugli. In addition, the duo launch their fifth chef residency, starting on January 30. On this occasion, talented chef Micky Backham will light up the stoves at Bánh Mì for a five-week period.
