It’s a tandem that seems to work well: Ivalu Acurio has the Peruvian pep that sticks to him and Yoss Kakinuma the Japanese know-how that runs through his veins. After two Sando stores, the duo is back on the entrepreneurial front, this week opening a second Saoko in place of Umaka at 20 rue du Conseil-Général. Ivalu and Yoss are expanding their culinary offering – initially launched at the Spoon Food Hall at Confédération Centre – by focusing on assertive Japanese street food. “In addition to pokes, we’ll be offering a multitude of garnished bowls, hot and cold noodles and a wide range of starters,” explains the restaurateur. The idea behind this gourmet initiative is to democratize Peruvian-Japanese street food, making it accessible to as many people as possible.
