On the 33rd floor of the Mohammed VI Tower, Aldabaran combines Mediterranean inspiration with Moroccan ingredients. This is Alain Ducasse’s first restaurant in the country, located within the Waldorf Astoria Rabat Salé.

The Waldorf Astoria Rabat Salé announced on September 28 the official opening of Aldabaran. Overlooking Rabat, Salé, and the Atlantic Ocean, the new restaurant byAlain Ducasse is inspired by the Riviera, while drawing on local Moroccan ingredients.

250 varieties of citrus fruits

At the helm of the kitchen, Morgan Perrigaud works in particular with L’Agrumiste, whose orchard near Fez is home to more than 250 varieties of citrus fruits. Stuffed pastries, gambero rosso, tortellini with ricotta, and lamb served with caponata set the tone for the menu.

Set in a space designed by Pierre-Yves Rochon, blending Moroccan craftsmanship with Art Deco influences, Aldabaran welcomes guests from breakfast through dinner. The wine list also features Moroccan wines alongside French selections.
