The founding duo of sandwich chain Bánh Mì are clearly not resting on their laurels at the start of this year. Vanessa and Pierre are delighted to announce the arrival of a new chef at their establishment. If you travel to Carouge, you’ll be familiar with Matthieu Frey, who worked in the kitchen of the Sabi restaurant. This talented chef will take up his new post on February1, and in addition to looking after lunch and dinner services, he will be responsible for accompanying future chef residencies. Having worked at chef Alexandre Couillon’s La Marine, we look forward to discovering his inventive, instinctive cuisine, inspired by his travels. We’ve already heard that a menu based on sharing has been drawn up; kombujime/truite/dashi yuzukosho, BBQ grilled red mullet/potato/daikon and saffron red mullet juice, and a dessert based on chocolate/sobacha/ribot milk/buckwheat crisp are all on offer.
