Chef Jacopo Romagnoli never ceases to surprise us! With each new menu at Café de la Plage, he continues to astonish us with a cuisine that’s increasingly distinctive and incisive. Knowing the chef’s love of gourmet, seasonal produce, his menu, served in his kitchen in the basement of the Grand Théâtre, is an invitation to high-flying gastronomy prepared by a brigade committed to the tattooed chef’s cause; a culinary symphony hidden from view that we enjoy as if we were playing hooky. While we succumb to the incredible beet tartare or the sublime agnolotti with the season’s last white truffles, we’ll remember the scallop sashimi from Brittany, which deserves to be part of this week’s menu. Accompanied by smoked sesame seeds, seasoned like a remoulade, placed on a bed of radishes from the Ferme des Frères Cuendet, with a few seaweeds, cucumber pickles and a cold broth made from citrus fruits and toasted sesame oil.
