Like the Pâquis and Eaux-Vives districts, Carouge is a breeding ground for gourmet delights. It’s hard not to find what you’re looking for when strolling through the charming streets of this Sardinian town. For the past two years, Cécilia Flatres has been giving a typical northern French dish a new lease of life. While retaining the traditional aspect of its production, the crêperie Blé Noir manages to add a personal, local touch to its creations. Crunchy on the outside and soft on the inside, the forestière is an obvious choice for this springtime season. Generously topped with shavings of smoked bacon, a still-runny organic GRTA egg, Gruyère d’Alpage de Semsales cheese and a few mushrooms in cream sauce, this crêpe is an emblematic reference of the Breton specialty.
