Owner Marc Popper and his partner, chef Victor Freiburghaus, propose a magnificent skate wing with hazelnut butter, accompanied by capers, lemon confit and dill. The duo recommend tasting this hymn to the sea with a lively chasselas, with citrus notes, produced by winemaker Damien Bastian Goddard (Ça Boit Libre) in Savoie. Enjoy your tasting!
