Mama’s porchetta

La porchetta! Just hearing that word transports us to the streets of Bologna. Leandro Cannone and Jérémie Brodard, founders of Mamahave had the delicious idea of offering this dish, still little known in the restaurants of the city of Calvin, and making it the flagship product of their canteen. Produced to a secret recipe, we can only reveal that porchetta contains no less than eight different herbs and is cooked languorously for many hours. Without further ado, let’s get to work on this crunchy, gourmet panini, featuring slices of porchetta, pumpkin pickles, provola, arugula and a clever blend of fresh, spicy sauces. You’ll find this new Italian street food duo in Geneva at 9 avenue Industrielle in the Acacias district.
