Sweet clover /Baileys / Black sesame

Max Arnaud, pastry chef at the Trois Tours restaurant in Bourguillon, surprises us once again with a dessert full of panache. Chef Romain Paillereau’s sweet right-hand man offers us Mélilot ice cream (a plant harvested by the chef’s picker), a Baileys-enhanced cream, an almond cookie and a roasted sesame chocolate mousse. All escorted by a melilot and black sesame sauce. For the tasting, let’s head for Fribourg!
