Sauvage Bar’s smart cocktails
There’s no fixed menu, just a lively selection and a few well-thought-out cocktails. At Le Sauvage Bar, customers are given the choice, and can pick their own bottle from the cellar. By offering carefully chosen bottles and plates to share, the Sauvage Bar, opened by Xavier Tanazacq and Noé Jolivald in June 2021, is not looking for a fashion effect. This is a place for straightforward pleasures, balance and conviviality.

La douceur du Bon Sauvage
Behind the counter, Lorène. Back from a year-long round-the-world trip, she brought back in her suitcases an undiminished curiosity and a pronounced taste for the right blends. “When you travel, you don’t just bring back memories, but also tastes and flavors,” she confides. And her creations bear witness to this, as do her revisited classics. Like Bon Sauvage, a sweet, accessible cocktail where passion fruit and rum meet the explosive freshness of a mint frappé à la minute. A light, fragrant sip to sip as an aperitif or at the end of a meal.
Another atmosphere, another intensity: Spicy Mezcalita is for those who like it “rough”! Mezcal, tequila, Grand Marnier, lime, sugar and above all… a chili pepper that brings out all the smoky notes of the alcohol without masking them. The result is dry, straightforward and spicy, perfect for a sunny table or a late-night counter.

Grapefruit liqueur
The more classic Sarti Spritz offers a milder alternative to Aperol. With a subtly bitter grapefruit liqueur, it’s perfect for those who want to stick with a light summer classic.
At Sauvage, you can drink, eat and be guided. The menu is evolving, as are the tastes, and Lorène already has plenty of ideas for new creations… In this wine bar, everything is designed to make you stay – from the dishes to share, to the carefully selected bottle, to the late-night cocktails, we’re just waiting to extend the moment!
