Nestling on the banks of the Arve, l'Artichaut owes its success to its sincere dishes and meticulous service. In the kitchen, Guillaume Fribault, assisted by his partner Margaux, composes a tightly-knit menu where every dish is just right.

To open the ball, the house slips in a fresh amuse-bouche: tuna tataki, zucchini and tomato, all served with homemade tarragon butter. Only a few bites, but the essential is there: balance, frankness and delicacy. The rest promises to be just as good.

A tight map, clear intentions

On reading the menu, the intention is there, and the names of the dishes whet the appetite. Gnocchi with sage, chopped veal, cannelloni with crabmeat… Our choice is the signature starter: calamaretti with chorizo. Served in a spicy emulsion, accompanied by piquillos for a summery touch, they unfold Hispanic accents that immediately find their place. There’s nothing ostentatious here, just a play of textures and flavors held together beautifully.

In the dining room, sommelier Raphaël Maunichy single-handedly manages the service with a rare attention to detail and a perfectly calibrated sense of rhythm. His recommendation of a Genevan Gamay to accompany our Angus beef proves to be right on the money, while the dish is without appeal. Perfectly cooked, with tender meat and concentrated juices, there’s no doubt about the quality. To accompany the dish, a selection of potatoes, poached or in a mousse in a siphon, offers an original interpretation of a classic food. The marrow bone announced in the dish’s title is used as an ingredient in the sauce, giving it a distinctive flavor that is much appreciated.

A fresh finale

For dessert, a cherry creation, accompanied by Breton shortbread, fresh herbs and a Magagascar vanilla cream for a play of textures and spicy tastes. A dessert in the image of the establishment: balanced, clean and without overload, appreciated at the end of the meal for its lightness.

Despite the absence of an à la carte vegetarian option, which could make the place even more accessible, the overall accuracy and precision of execution mitigate this reservation. And so, without fuss or pretension, l’Artichaut stands out as one of those rare places where consistency prevails over trendiness. Every detail testifies to a powerful commitment and unrivalled passion. A table for those who seek the essential rather than the effect.
