There are some establishments that make a lasting impression on you, revealing their savoir-faire with as much elegance as benevolence. Here, in the heart of the village of Chagny, the premises are devoid of ostentatious and pretentious signs. Like a gastronomic temple that has stood the test of time with discretion and humility, Lameloise sits at the center of this typically Burgundian village. This story could almost end here, like a lunch frozen in time after having filled hearts with generosity and kindness. This house is one of those culinary emblems that reconciles us with life… so let’s make the most of it for a gourmet interlude.

From gaze to voice
Lameloise is a house with a capital M. A house where benevolence rhymes with rigor, work with constancy, transmission with succession. It’s through the gaze of a sommelier or the sound of a maître d’s voice that you can experience this soothing feeling. Chef Eric Pras is its guardian, masterfully guiding a brigade, a room, a place and a charismatic Burgundian menu. A former disciple of Troisgros, Bernard Loiseau and Pierre Gagnaire, he subtly departs from the region’s culinary stereotypes without forgetting them…
Smoked char with vine shoots and a potato and watercress broth is already a revelation. Our signature dish, crispy marinated langoustine, topped with rosemary puffed rice, reaches new heights of delicacy. The Saint-Pierre, poached in jelly, asparagus tips and mustard and verbena sabayon awaken the senses. On sublime triangle-shaped aperitif canapés, morel mushrooms, stuffed with sweetbreads, are served with cuttlefish, refreshed in a chardonnay and lime blossom nage. Sublime! A gastronomic feat that will live long in the memory.

Gastronomic balance
The dessert, with its emphasis on lemon, prompts gastronomic reflection. Chef Eric Pras’ sincere approach to excellence is soothing and comforting in every corner of the Maison Lameloise. The dining room is an extension of the culinary vision of the kitchen brigade, and a special mention goes to director Cédric Servain, who reinforces the gastronomic message of the Meilleur Ouvrier de France. A difficult balance, brilliantly achieved in every sequence of this wonderful menu.
