La Piscina: freshness on the surface, finesse at depth
La Piscina will make you experience summer differently. Passionate manager Gary Davignon, accompanied by Thibault Haener and Morgan Tardy, have imagined the establishment as a place apart. It’s a place where you used to be able to bathe, but now its mission is to refresh without getting wet.
Transparent cocktails
Behind his bar, Dorian Picard unveils a cocktail menu for this summer that plays on transparency and lightness. We had the opportunity to savor two creations, ideal for prolonging afternoons by the pool.
The star of the house, of course, is the Piscina. An airy composition of vodka, bergamot liqueur, house verbena syrup, verjuice, soda maté and sparkling water. Ultra-fresh, this crystalline cocktail boasts a graphic elegance that perfectly matches the sleek surrounding décor. As a nod to its title, a miniature diver appears in the glass: a playful detail for a cocktail of impeccable balance.
Smoked mezcal
As a counterpoint, the Pachamama is more earthy, more intense. It blends smoky mezcal, homemade beet syrup, white vermouth, verjuice and ginger beer. The beet explodes in flamboyant hues, carried by a full-bodied profile. A creation to be enjoyed on its own or at the table, with a creamy burrata or a few Padrón pimientos to munch on.
With its shareable food menu, Riviera ambience and poolside feel, La Piscina offers a sunny interlude in the heart of the city.
