Nestled in the heart of the Sardinian city, the “Dix Vins” restaurant is the apotheosis of the bistro. For more than two decades, René Fracheboud, the owner and master of the kitchen, has been cooking up the kind of gourmet dishes that have the whole of Geneva in a frenzy. It’s hard to resist the crayfish tail cassolette, Romans ravioli and tarragon bisque. Succumbing to the temptation of morels, known as Jumbo because of their imposing size, stuffed with ricotta and cooked ham is no longer a sin, because the delight is divine. And if you’re a fan of bistro-style cooking, don’t worry: veal head and tongue in ravigotte sauce are still on the menu.

Old advertising posters for alcoholic beverages and spirits – still authorized – such as Ricard, Suze, Martini and Cinzano, adorn the walls of the dining room; an intimate six-cover table d’hôtes hides discreetly behind the bar, whose shelves are overflowing with old liquors of all kinds. The warm atmosphere is mirrored in the main dining room, with its authentic, bistro-style decor, much appreciated by guests. There’s no doubt about it: at Le Dix Vins, consistency and stability are assured, despite the difficulty of maintaining them on a daily basis. Bravo to these modern-day artists! In a welcoming and elegant atmosphere, guests are looked after with kindness and attention by a waitstaff with a meticulous eye for detail. The culinary festival continues with the unmissable wing of skate meunière, followed by beef Wellington with truffle and foie gras sauce.
René Fracheboud knows from experience that it’s difficult to create great dishes without trustworthy partners. Contrary to popular belief, the Geneva and French-speaking region is an inexhaustible source of exceptionally rich and diverse produce. In the image of the Rondeau butcher’s shop and the Courtois farm, the chef cultivates invaluable collaborations that enable him to showcase the local area. As for vineyards, he is particularly fond of Domaine des Balisiers in Satigny and Domaine des Curiades. Other crus are waiting to be discovered, numbering well over ten. A good excuse to make a detour to Carouge!
