Back to Inda-Bar, Morad El-Hajjaji's gourmet stronghold on rue Henri-Blanvalet. The watchwords: rigor, charm and happiness!

There are establishments that command respect. Establishments that know how to welcome guests with elegance and passion. This passion is at the very heart of the restaurant business. Many people forget this on a daily basis, while others live it out with every service, at great sacrifice. The owner of this restaurant, Morad El-Hajjaji, is just such a man, one of those bosses who have his eyes on everything. He’s a leader who possesses knowledge and know-how, and who strives to pass on the notions of a restaurant business that is unfortunately on the verge of extinction. It’s a feat he’s been successfully accomplishing for over five years, and one that has won him the loyalty of a Geneva clientele as demanding as it is ever-changing.

Atmosphere, atmosphere

While retaining the DNA of his Inda-Bar restaurant, Morad El-Hajjaji has managed to evolve his establishment over time. A benchmark in festive ambiance “à la genevoise”, he skilfully cultivates it without ever falling into the vulgarity or decadence of a certain prosaic catering style (we’ll leave that kind of choppy practice to groups in France who confuse catering with events). He is well aware that life is a struggle, and that a play is re-enacted at every service. The result? A full house and guests happy to enjoy contemporary, consistent and delicious Indian cuisine.

What accounts for this success? Self-sacrifice, surely. Then, inevitably, the work of a boss who is demanding with himself and, de facto, with others. One of the factors in the ransom of glory. Then there’s the wine list… and to think that Morad began his selection with just a dozen references and now boasts almost 1,000 bottles. In his establishment, the level of attentive, regular service is highly efficient and sets benchmark standards we’d like to see extended far beyond our Geneva borders. Indian cuisine is judiciously balanced between respect for tradition and a modern twist. After all, isn’t this a recipe for longevity? Easy, you think? Think again…
