Mattia Baldissara, the conductor of the Salle du Tablard, is a real ray of sunshine from Italy.

Meet the man who brings the restaurant to life with his lilting accent straight from Milan! Mattia’s passion for catering goes back to his university days. A real ball of energy, he got his start in a well-known Trattoria à Milan, where he ended up as manager. During his thirteen years with the establishment, his love of the trade confirmed à through customer interaction, dynamics and variability.

He arrives with his family in our beautiful city of Calvin in the midst of a health crisis. Eager to work, he began his career in Geneva à Osteria La Bottega to continue in a neighborhood bistro à Florissant. It was in 2022 that he met Martin Burrus, the owner of Le Tablard.
