Alongside Yoann Caloué, sommelier Mathieu Dormeau is the new face of the Café des Banques dining room.

With the arrival of the talented Mathieu Dormeau at Café des BanquesGeneva continues to attract indoor talent from France. And so much the better for us! So let’s make sure we keep the culinary stars who help make Geneva’s culinary world shine. Trained by the very best, Mathieu will be setting up his corkscrew in Geneva at the end of 2022. A native of the South of France, he began his career at l’Oustau de Baumanière before moving to Corsica to work at Domaine de Murtoli, before returning to France to work at Hôtel du Castellet for Meilleur Ouvrier de France Christophe Bacquié.

At this point, he decided to change horizons and began his Swiss career at Chez Philippe, Philippe Chevrier’s famous Geneva steakhouse. The health crisis prompted the sommelier to return to France to work at the Auberge in Saint Rémi de Provence with chef Fanny Rey. But after his first experience in Switzerland, he decided to return to Geneva, and started the year at Café des Banques. “We have big ambitions with chef Yoann Caloué. We want to revamp the wine list to make it even more personalized”. Champagne list, food and wine pairings… it’s whispered that the number of wine references will double this year from 400 to 800… vivement! Welcome to Geneva, dear Mathieu!
