It only takes once to fall under the spell of a restaurant. A tone of voice when making a reservation, a smile on arrival, expertise and knowledge when taking an order. Even if culinary trends and reality TV would have us believe that service takes second place to cooking, believe me, it doesn’t! For a restaurant to work, there has to be skilful coordination between the dining room and the kitchen. You can’t have one without the other.
