Thunderclap in the sky at Mandarin Oriental in Paris. Against all expectations, chef Thierry Marx is leaving the Parisian palace on the Faubourg Saint-Honoré to concentrate on his own restaurant Onor. A former judge on the TV show Top Chef, this molecular cuisine enthusiast is turning the page after 14 years behind the stoves of the Michelin-starred restaurant Sur Mesure, as well as the brasserie Le Camélia, bars and room service. He explains in a press release that this choice represents “the culmination of 25 years’ work on a different economy, with a social and environmental impact. It’s the right time to grow the Onor label”.
