Susuru owner Fabien Berthet invites a chef back to his gourmet den on rue du Stand. For this spring edition, it's the turn of Sushiba's boss, Melissa Godefroy.

A native of Nîmes, France, chef Melissa Godefroy has always been fascinated by culinary diversity and the conviviality of meals shared with family and friends. A young entrepreneur, she is the founder of Sushibaa pop-up located in Les Halles de l’Île, offering breaded and fried futomaki sushi rolls resembling hot dogs. With this surprising and innovative concept, Sushiba strives to offer a variety of topping options that you can customize to your desires. For this new collaboration, chef Melissa Godefroy proposes a broth ramen with vegetables seasoned with soy sauce, coconut milk and lemongrass-infused oil. The garnish includes grilled langoustine, edamame, leek, pickled enoki, pickled egg, spring onions and beet chips.
