Njørden welcomes Domaine de la Colombe
The heart of the village of Aubonne in the canton of Vaud has some exciting news in store for us. On March 5, the Njørden will open its doors to winemaker Laura Paccot of the Domaine de la Colombe for an exceptional evening of wine-making and Nordic gastronomy. The estate’s fabulous wines will meet the Nordic recipes of the Njørd Café, all assembled with creativity and precision by master sommelier Tony Lecuroux under Laura’s watchful eye. To your delight, you’ll be able to savor a perfect egg, melanosporum truffle, leek drop, Västerbottenost espuma, followed by homemade hot-smoked Swiss salmon, potato saladine with lovage and red onions, a selection of mature cheeses and a citrus declension.
