As autumn gets underway, chef Jérémy Desbraux is on all fronts. First of all, the two-Michelin-starred chef is preparing to close his gastronomic restaurant and hotel for major renovations. “We wanted a change of decor and atmosphere. While cultivating the history of the place, it was time to move our house into a new universe”, says the chef, who confirms that the restaurant will be closed for four months from November, and the hotel for 10 months. At the same time, Jérémy Desbraux is in the midst of preparations for the celebration of Saint-Martin’s Day. For this tradition rooted in the Maison Wenger the gastronomic festivities will take place at La Halle du Marché-Concours in Saignelégier on November 8, 9, 10, 14, 15, 16 and 17. Enjoy potato cake with liver, household jelly, bouillon and bread crusts, black pudding, leek atriaux, roast sausage, home-made sauerkraut, aniseed bread and caramel-vanilla millefeuille. What a program!
