New wine list at Le Pérolles

Julien Ayer, restaurant manager Le Pérolles in Fribourg, combines the exceptional culinary skills of his illustrious father Pierrot Ayer with the winemaking expertise of nine Fribourg winegrowers to create a wine list dedicated entirely to the canton’s wines. From Château de Praz to Domaine Chervet and Cru de l’Hôpital, the nine producers share their passion through this innovative project. For Julien Ayer, trained at the Association des Sommeliers Suisses Professionnels and an enlightened wine enthusiast, the objective is clear: “We are fortunate to have talented young winemakers in the region; passionate people who work the land with the strictest respect for local produce; let’s showcase them by associating them with quality cuisine at Restaurant Le Pérolles, which all discerning epicureans and gourmets have known and appreciated for over 30 years”.
