Like a soccer mercato before its time, the game of hotel musical chairs is in full swing at the FourSeasons Hôtel des Bergues in Geneva. After eight years of loyal service and maintaining his Michelin star, chef Massimiliano Sena is leaving the palace’s kitchens to embark on new gastronomic adventures. Until his worthy replacement is found, chef Andrea Polcino will be in charge of the kitchens at the Italian gourmet restaurant IlLago. In the dining room, Salvatore Salerno has been promoted to Director of Beverage Management, and will be replaced by Nicolas Bragard, who has been appointed Director of the restaurants Il Lago and Le Bar des Bergues. Alicia Poupeney becomes manager of Il Lago.
