Mapo becomes Bistrot Collette
As we reported at the end of June, Emmanuelle and Paul-Etienne Cousin have decided to turn the page on their Mapo restaurant. The couple who delighted us for so long in their gourmet establishment in Chêne-Bourg are giving way to a new duo who have just taken over the business. Let’s give a fitting welcome to Anh Nguyen and her husband Max Collette, none other than the former chef of La Huchette in Carouge. Rumour has it that the bistro spirit will be guaranteed. Traditions, authenticity and generosity are the key words of the gastronomic message the couple have been hoping to get across since the opening. The Meurette-style perfect egg, grilled leek in vinaigrette, truffled poultry with butternut purée or beef bourguignon with potato mousseline are just some of the dishes that will delight our taste buds and that we can’t wait to discover.
