Bánh Mì's new chef residency is inspired by the creations of Taiwanese chef Demi Yeh.

From May 4 to 18, you can discover chef Demi Yeh’s dishes in the kitchens of the Bánh Mì restaurant for two weeks of madness. The founders of the arcade dedicated to Vietnamese street food, Vanessa and Pierre, will be recreating some of Demi Yeh’s dishes, which unfortunately cannot make it to Switzerland. Having previously worked in restaurants such as Servan, Neige d’Été, Chambre noire and Mokoloco, the chef has always drawn on her Taiwanese origins and Japanese culinary influences for her creations, while subtly adding Western gastronomic touches brought back from her travels and other residences, with an emphasis on seafood. A seasonal menu based on his cuisine will include tuna tartare, Taiwanese sauce, radish, fried shallots and miso hummus, chili oil, rice chips.
