Culinary collaborations are well underway in the beautiful city of Calvin, and have everything to please fans of Iberian gastronomy and beyond. The owner of Bellota-Bellotarestaurant, Augustin de Candolle, welcomes chef Alba Farnós Viñals for a week of gourmet madness from February 7 to 15. This chef, originally from Barcelona, moved to France for her Master’s degree in Environmental Sciences, before settling in Changins at the age of 23 for an internship. Her growing passion for cooking took her to the École Ferrandi in Paris, then to renowned establishments such as Virtus and L’Astrance to continue her training. On the eve of opening her own restaurant, she multiplies her collaborations, honoring her Catalan origins and French culinary techniques. We’ll be seduced by hash browns bravas (spicy potato pancakes), vegan aioli & smoked paprika oil, fried morcilla wontons, white bean & lemon dips, mayonnaise eggs with squid ink, squid & dill or cannelloni stuffed with octopus, mussels and pangratatto.
