Sea Urchin & Muscat
This week, let’s head to the Fiskebar in the heart of the Ritz-Carlton Hôtel de la Paix to discover the pairing proposed by director Alexandre Ceret. With this Breton sea urchin, fermented white strawberries, almond espuma and beet powder, he suggests tasting a wine produced in the Roussillon region, in the commune of Calce, by Virginie Maignien.
Domaine La Spanda “Ayur” Vin de France Blanc 2021, is a cuvée made from naturally vinified Muscat à petits grains grapes. This is a wine of great finesse and elegance, combining the floral and exotic aspects of Muscat. It’s a perfect match for sea urchin, with its fresh, invigorating character and generous, fruity flavors, making it an ideal partner for this lovely dish created by chef Francesca Fucci.
