Return to see chef Romain Paillereau at Les Trois Tours Trois Tours on the heights of Fribourg is always a joy. Totally in tune with his cuisine, the former tenant of the Pinte des Mossettes offers us a superb twenty-third menu combining modernity, technicality and generosity. Entitled L’éveil des Papilles, this new opus once again marks the gastronomic ascendancy of the Trois Tours establishment. The chef now regularly leaves his kitchen to present his creations to customers. This week, the Food Letter focuses on dessert. A stunning creation combining lightness and subtlety: a bergamot-infused baba, accompanied by a bergamot gel, coconut mousse, white chocolate puffed rice crisps and lemongrass sorbet.
