It was during a trip to Bordeaux that we had the pleasure of discovering Démeter, the epicurean stronghold of chef Gary Village.

In one of the world’s cities with the most restaurants per square meter, it can be hard to find your way around the rich variety on offer. But at Déméter, everything appeals to us: the location, the setting, the dishes to share and especially the recipes from all over the world, just waiting to be tasted. We begin our dinner in the spirit of sharing with Korean pancakes, followed by spicy cabbage and a magnificent cod escorted by a laksa sauce that will soon be the subject of a future article. That evening, it was the chocolate ganache that melted our hearts, with its play of textures and fine balance of tastes, sublimated by lapsang souchong tea ice cream, buckwheat tuile and sablé and puffed buckwheat. A fine creation by chef de partie Manon Fabry under the watchful eye of chef Gary Village. For your next weekend in Bordeaux, head to Déméter, a truly epicurean address where sharing and conviviality go hand in hand.
